Two other open hot dogs had no date mark and had been in cooler for unknown amount of time and were pulled from cooler and placed on embargo/recommended for discard during inspection. Ensure foods are dated within 24-hours of being opened and discarded on 7th day (DAY+6). Concentration was discarded and nozzles were re-sanitized at proper concentration of 200 ppm. Ensure sanitizer concentration for Quat is tested regularly using test strips between 150-300 ppm.

This establishment received a D Grade and had 3 Priority, 0 Priority Foundation and 5 Core violations on this inspection. Reviewed date marking (DAY+6) procedure, cleaning tongs contacting TCS (Temperature Controlled for Safety) foods once every 4-hours, wash/rinse/sanitize process, monitoring sanitizer levels using sanitizer test strips, and monitoring internal food temperatures using a probe thermometer. Emailed inspection report and provided 72-hour hold handout. AMC Training Visit offered to assistant manager. No County legal action will result from this inspection.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
