PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. The person in charge (PIC) did not have a probing thermometer to verify temperatures. The person in charge (PIC) stated the items have been there since the day before. The food items were embargoed and voluntarily discarded by PIC at the time of inspection. The PIC will only put food items on the top shelves were food maintaining proper temperatures. The PIC will place a work order to have unit addressed. Also, in the walk-in cooler where TCS foods such as gallon milk are stored in not maintaining foods at 41*F below. The PIC moved items to the cold side of the walk-in cooler at the time of inspection. Please ensure TCS foods are kept at 41*F or below.

The ambient temperature read 46*F via min/max thermometer. The PIC a will place a work order to have the unit repaired. Also, the walk-in cooler were retail TCS foods are kept such as milk is not keeping one side of the unit below 41*F due to ice build-up behind fans. The PIC was instructed to contact a company again to come to the facility a repair the unit. Please keep the TCS foods on the cold side of the walk-in cooler unit issue is addressed. A re-inspection will be conducted within 10 day to ensure issue has been resolved. Please ensure all refrigerators maintain food temperature below 41*F.

The person in charge (PIC) was not able to obtain the thermometer at the end of the inspection. Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence...5 live roaches (different growth stages) were found underneath the 3-compartment sink and on the hallway outside of the restroom. Pest control company records for 9.20.19, 6.20.19, and 2.18.19 were reviewed during the inspection. Please contact existing pest control company to intensify monitoring and trapping efforts pests. A re-inspection will be conducted in 10 business days. Please have pest control documents prior to re-inspection. Per FDA Food Code: The premises shall be maintained free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by: (A) Routinely inspecting incoming shipments of food and supplies; (B) Routinely inspecting the premises for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control as specified under §§ 7-202.12, 7-206.12, and 7-206.13; and (D) Eliminating harborage conditions.

Also, the cove base is missing in 3-compartment sink area and on the hallway. Physical facilities shall be maintained in good repair to be smooth, easily cleanable, and non-absorbent. Please make proper repairs prior to next routine inspection. Per FDA Food Code 2013, "Poor repair and maintenance compromises the functionality of the physical facilities. This requirement is intended to ensure that the physical facilities are properly maintained in order to serve their intended purpose"

No County legal action will result from this inspection. Of note: inspection report was e-mailed and received by the PIC at the time of inspection. e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
