PIC stated all foods had been in the walk in refrigerator overnight and were embargoed and voluntarily discarded. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. *Of Note* PIC was also instructed to remove the hot foods from the hot dog rollers during this inspection due to the possibility that spore or toxin forming bacteria may have contaminated the foods when they were out of temperature in the walk in refrigerator, prior to being reheated.

Upon entering the walk in refrigerator, the inspector measured a minimum ambient air temperature of 47*F with their max/ min thermometer near the entrance. On the far other side of the walk in refrigerator the inspector measured a minimum ambient air temperature of 38*F. All TCS foods in the walk in refrigerator were observed to be stored by the entrance and were out of temperature. Please have the walk in refrigerator serviced to maintain a minimum ambient air temperature of 41*F throughout the entire unit or rearrange the walk in to store the TCS foods in the coldest part of the unit. A reinspection will be conducted on 5/24/2021 to verify the walk in refrigerator has been serviced or TCS foods are no longer being kept in it.

Also observed the mop sink basin to have a heavy accumulation of debris. PIC stated both areas in question would be deep cleaned. Physical facilities shall be maintained in clean condition and good repair.

Due to COVID-19 concerns a signature was not obtained from the operator during this inspection. The inspector verbally reviewed the establishment's inspection rights with the person in charge (Alan M.) and delivered a copy of their inspection rights with the inspection report. This establishment is not participating in the award program at this time and had 1 Priority, 2 Priority Foundation and 6 Core Violations on this inspection. No County legal action will result from this inspection. 2-102.12(A), C – Certified Food Protection Manager - No employee with supervisory and management responsibility with the authority to direct and control food preparation that is deemed a certified food protection manager. - PIC was unsure as to whether or not this establishment employs a Certified Food Manager. No Certification was observed during this inspection - At least one employee shall obtain a Food Manager Certification prior to next routine inspection. Inspection report delivered via email.
