PIC placed work order to have the machine maintained. Inspector directed employees to use 3 compartment sink to wash, rinse and sanitize dishes until the dishwashing machine could be maintained. Always maintain sanitizer levels in dishwashing machines at correct concentrations.

Also observed clean cups stored as clean at the bar that were wet as well. PIC arranged dishes and cups to allow for adequate air drying. Always air dry dishes after washing, rinsing and sanitizing.

No County legal action will result from this inspection. A reinspection will take place for the dishwashing machine and atmospheric vacuum breaker within 3 days. A reinspection for test strips will be conducted within 10 days of routine inspection. Inspection report delivered via email.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
