For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.--In the cold holding unit in the kitchen across from the grill there was containers of beans, cooked corn, queso cheese, sliced tomatoes, cooked mushrooms, pepper jack/cheddar/gouda/American cheese, a cream cheese and chicken sauce, cooked onion rings, and sliced cabbage all between 48*F-52*F. PIC stated that these items ranged from being in the unit for 1 day to 4 days. PIC was advised to hold foods cold at 41*F or below. PIC had the food discarded at time of inspection. The unit was adjusted and was reading 41*F ambient air temperature at time of inspection. PIC was advised to monitor the unit.
