Person in charge (PIC), replaced soap at time of inspection. Discussed with person in charge (PIC) that handwashing cleanser must be available at handwashing sink at all times. Discussed importance of providing hand soap to ensure proper hand washing with the PIC.

Soda nozzles must be cleaned frequently enough to prevent the accumulation of organic matter. Discussed cleaning frequency with the person in charge (PIC).

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. - Observed chicken wings on a sheet pan on a rack at ambient temperature with a temperature of 83*F. Per employee, chicken finished cooking an hour and a half before inspection. Employee reheated chicken wings to 165*F at time of inspection to restart the cooling process. Discussed with person in charge (PIC) about proper cooling. All time and temperature controlled foods for safety (TCS) should be cooled from 135*F-70*F within 2 hours and from 70*F-41*F within 4 hours for a total of 6 hours to cool below 41*F.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods - Observed multiple holes in walls in the dishwashing area. Observed duck tape covering hole in call where outlet used to be near the handwashing sink between the ice machine and the prep sink. Patch and paint all holes in walls prior to next routine inspection. Repeat violation. Core-6-501.12, C: Cleaning, Frequency and Restrictions - Observed vent on the wall behind the dish drying racks in the dish area with heavy accumulation of dust. Discussed with person in charge (PIC) about cleaning vent more frequently. Clean prior to next routine inspection.

e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
