Observed items including soups, breakfast gravy, beets, stuffing, breakfast sausages in walk in cooler that were prepared/cooled/stored with no discard date written on container. Person in charge had staff add dates to containers. Advised person in charge to have staff date mark items once known that items had cooled to 41*F.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Kyle S. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Discussed that food items are to be stored covered in the walk in cooler once cooled to 41*F> Provided listing of companies that provide Certified Food Protection Manager Training. Provided guidance for establishment to have a written procedure for bodily fluid clean up, and kit on site.
