On prep table, inspector observed a pan of baked spaghettis with an internal temperature of 122 degree F. Per staff, baked spaghettis was pulled from oven and let it cooled down first before transferring to cold holding unit, no cooling log was available for justification on cooling time. The cooling procedure was not followed per policy. Please retrain staff on this food safety code. Baked spaghetti is now transferred to cold holding unit and cooling time is now logged.

This establishment is on the Cutting Edge of food safety and was awarded a “B” grade with 1 priority, no priority foundation and no core violation for this inspection visit. After discussion with the person in charge and staff it has been determined that the root cause of the violation documented on today's inspection was a lack of effective staff training which resulted in the violation. No County legal action will result from this inspection. Inspection report sent to Manager's email.
