PRIORITY VIOLATION-3-501.19 (B1,3-4; C1,4-5), P: Time as a Public Health Control; Temperature, Discarded. Observed on line cut lettuce with discard time marked of 10AM, and on shelf below containers of cut tomatoes with a discard time of 2PM, and in walk in ham with discard time of 10AM. Per person in charge and time as a public health control policy items are to be discarded after four hours. Observed on line cut lettuce and cut tomatoes (internal temperatures measured to be 68-72*F) with no time stamp. Person in charge had employee remove all containers of cut lettuce and cut tomato with discard times that have been exceeded or with no time marked and items were voluntarily discarded. See embargo. Person in charge had employee stock new cut lettuce and cut tomatoes and times were marked on each item. Discussed time as a public health control policy.
