PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ....Hummus piled high in a pan, above the proper fill level, in the top of the restaurant cold table at 47*F internally. Hummus was at proper temperature in bottom of the pan. Manager stated hummus had been out less than two hours and was moved to walk-in to re-cool. Please do not over-fill cold table pans. Ensure TCS food is maintained 41*F or below.
