Person in charge (PIC) moved eggs to bottom shelf at time of inspection. Ensure all raw animal proteins are below RTE foods and organized raw animal proteins by cooking temperature at the time of the inspection. All raw animal proteins must be stored below RTE foods and stored according to cooking temperature at all times to prevent cross contamination. Discussed the importance of proper food storage to prevent cross contamination.

Core-3-602.11, C: Food Labels - Observed packaged portioned frozen chicken and whole frozen chicken in the freezer as grab and go products for customers to grab. Per person in charge (PIC), chicken is portioned from bulk packages and sold by facility. The individual packages had no label indicating where the product is portioned out and sold. Explained to person in charge (PIC) the importance of labeling all grab and go products with (Basic Requirements: 1) Name of Product; 2) Processor Name; 3) Processor Address or Phone Number; 4) Ingredients; 5) Approximate Weight; 6) In English). PIC stated they will start to label all product taken out of bulk packages and repackaged at facility. Repeat violation.
