Also observed raw sausages stored above plant-based soy chorizo. No active contamination was observed. Discussed separating raw animal proteins from RTE eat foods to prevent cross contamination. The employee moved the raw foods to the lower shelves at the time of inspection.

PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap ------ Observed hoses connected to threaded spigot with no backflow prevention device at two different mop sinks in the back store room. Observed one sink equipped with a hose bib and the mop sink inside the dairy cooler with a mixing faucet. Disconnected the hoses to restore air gap. Reviewed requirements for back-flow prevention on this type of spigot. All hose bibs must be equipped with hose bib vacuum breakers to prevent a cross connection between the potable and non-potable water systems. Please install a back-flow prevention device, such as a hose bib vacuum breaker or AVB, if the hose remains connected to the faucet between use. A re-inspection will take place on 9/15/2023 to ensure the appropriate back flows have been added.

This establishment received a(n) B Grade and had 1 Priority, 0 Priority Foundation violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager. Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge's certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. A re-inspection will take place on 9/15/2023 to ensure priority violation #49 has been corrected. Of note: Produce observed holding at 43*F when measured with a min/max thermometer. PIC stated they were unsure if the unit was in defrost. Advised PIC to closely monitor and repair, if needed. Advised PIC to replace missing plastic air curtains to aid keeping the unit at 41*F or below. A copy of the report was emailed to the manager. No County legal action will result from this inspection. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
