Observed cooked tri color pasta salad at 50*F and caramel apple crunch TCS salad at 50*F in deli case. Employee stated items were made at open and put in case without making sure they got to 41* first. Product was less than 6 hours out of temperature and was moved to walk in to rapid cool below 41*F. TCS items must be allowed to cool in the walk in, uncovered until 41*F is reached and then may be moved to display cases. Display cases are not designed to cool product properly and made to maintain the 41*F temperature.
