Observed various sliced deli meats and cheeses in sandwich prep fridge FOH to be at 45-53*F. Unit observed at 39*F. PIC stated items were stocked last night or beyond and voluntarily discarded. Meats were being stored folded into wax paper and placed sitting up, recommend ensuring meats are being cooled in walk in after being sliced and laid flat with wax paper placed in between portions to allow for more air flow to products. Verification should be done to ensure items are reaching 41*F and temperature checks done regularly to verify proper temperatures. TCS items must be kept at or below 41*F to prevent growth of bacteria.
