Observed raw bacon at 48*F, raw clams at 46*F, and various types of raw sausage at 48*F in small fridge room. Unit observed at 47*F. PIC stated items were placed in unit approximately 2 hours prior and moved to another unit to rapid cool to below 41*F. Manager called for maintenance on the unit. TCS items must be held at or below 41*F to prevent growth of bacteria. Verify cold holding units are working in a way to ensure TCS items are held at or below 41*F.
