PRIORITY VIOLATION-3-501.14, P: Cooling. Observed three large containers of Green Chile Sauce with an internal temperature of 70*F-78*F at 3:00pm after cooling for approximately 5 hours. The person in charge stated food items were put in the cooler at 180*F at 10am. The product was at 120*F at 11am on the cooling log. The product failed to cool to 70*F within two hours. The product was embargoed and voluntarily discarded at the time of inspection by the PIC. Please ensure food cool from 135*F to 70*F within two hours, and then cool from 70*F to 41*F within an additional 4 hours. Discussed cooling parameters and provided cooling handouts.

No County legal action will result from this inspection. Inspection rights were verbally acknowledged with Jesus H. Inspection report was emailed and received by Jesus H. at the time of inspection. Of note: Reviewed cold holding procedures. Establishment is using a commercially pasteurized liquid ice cream mix/base.
