Manager voluntarily discarded. A root cause analysis of the violation determined the cause to be training related. Employees were unaware of the cold holding requirements for raw pooled eggs (egg wash). Employees should be re-trained on proper cold holding procedures for TCS foods. This product must be maintained at 41 *F or below to prevent bacterial growth.
