Proper cooling methods used; adequate equipment for temperature control
At the time of inspection, manager had just put raw fish and beef into the 12 drawer cooler. Reviewed requirement for temperature/time control if unit was in use. Manager stated they did not want to use time control and moved food, still in temperature, to other cold holding units. Unit read 48*F on min/max thermometer. Other manager informed EHS the 12 drawer chiller unit will not be repaired for 4 to 6 months, stating the unit was taken out of service and they would be using the cook line cold tables for all required cold storage at the cook line. Unit is condemned. Do not use the 12 drawer cooler for TCS food until it has been repaired to hold 41*F or below. Please contact EHS when unit is put back into use. Will reinspect 11/9/22 to verify unit is not being used for TCS food. 4th consecutive repeat violation
