PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed an overfilled pan of cut lettuce at 56-57 Deg. F. on ice in the kitchen area. Per operator the product had been out less then 2 hours, so it was relocated to the walk-in at the time of inspection. Observed a container of raw mahi mahi tuna at 50 - 57 Deg. F. on ice by the prep-line. The ice had mostly melted and the product was over filled. The product was embargoed at the time of inspection due to the operator being unsure as to what time the it was placed out. Products that are on held on ice must have the ice surrounding the food product in order to provide proper temperature control. Suggest replacing these food ice bins with commercial prep-refrigeration units in order to provide a more consistent temperature control for Time Temperature Control for Safety Foods (TCS). Repeated violation.

Observed a pan of portioned rice and beans at 68 Deg. F. in one of the cookline reach-in refrigerators. Per operator, it was recently portioned with-in the previous hour. The operator removed them from the portioned bags and began cooling in the walk-in freezer at the time of inspection. Be sure all prepared Time Temperature Control for Safety Foods (TCS) are properly cooled to 41 Deg. F. prior to portioning.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Observed several of the lids for the prep refrigerators on the prep-line in disrepair and not properly staying open to facilitate ease of use and proper temperature control for the units. Repair and / or replace damaged lids as necessary.

An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Report was emailed. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
