PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed heavy cream, guacamole with chopped tomato, and chopped tomato all 48-50F in the reach in cooler next to the mop sink. The unit was holding 50F. Person in charge provided logs documenting the temperatures of the food items from the morning. The items were 38F. PIC moved all items to the walk in refrigerator to cool back down. The refrigeration temperatures were corrected during the inspection and now reads 41F. Observed a large container of salsa 45F in the walk in cooler. PIC stated it was made the previous day. PIC placed an ice wand into the container. Also observed raw chicken and beef at 50F in the small reach in low boy cooler on the line. PIC placed ice on the items. Observed chopped lettuce and rolled cheese tacos in the main prep cooler on the assembly line at 44-48F. PIC removed half of the contents of each and placed bags of ice over the items. TCS food must be 41F or below when cold holding.
