Wiping cloths; properly used & stored
Core-3-304.14, C: Wiping Cloths, Use Limitation - Observed several in-use wet wiping cloths scattered throughout kitchen on food contact surfaces (not in a sanitizer bucket). Discussed with person in charge/staff that in-use wiping cloths should be stored in an approved sanitizer solution in-between use to prevent bacterial growth in the wiping cloth. The wiping cloths were removed and placed in a sanitizer solution.
