Observed dried food debris in mechanical corn grinder in back bakery prep area. Person in charge (PIC) stated the grinder was last used to grind corn masa a month ago. Advised PIC that equipment use to process time/temperature control for safety (TCS) foods must be washed, rinsed, and sanitized after each use or within 4 hours. PIC stated they will have the mechanical corn grinder as soon as possible.

Observed large plastic containers of corn masa in glass display refrigerator in retail area measuring 47 - 49 degrees F. Person in charge (PIC) stated the corn masa had been in the refrigerator for a few days. All other food items in the refrigerator were below 41 degrees F. Additionally, observed a pot of cooked beef tamales cooling on counter next to stove measuring 130 degrees F. Advised PIC that time/temperature control for safety (TCS) foods, such as corn masa and cooked tamales, must be cooled from 135 degrees F to 70 degrees F within 2 hours and 41 degrees F within 4 hours. Embargoed corn masa. PIC moved the cooked tamales to the refrigerator. Provided cooling handouts for reference.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
