PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed gyro 53F and chopped lettuce 47-51F in a drawer inside of the prep table across from the grill. The person in charge stated the items were placed into the unit an hour prior. The unit was holding 41F. PIC placed bags of ice on the items to cool them down. TCS food items must be stored at 41F or below when cold holding. ***After discussion with the person in charge, it has been determined that the root cause of the violation was not verifying the cold holding temperatures which resulted in the violation.
