PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ====Observed multiple tcs foods in temperature danger zone inside upright true refrigerator opposite managers office. Observed cooked eggs at 46*F; cooked ham at 48*F-49*F; liquid egg at 50*F-52*F; butter at 46*F. Ambient temperature of the unit is at 46*F with min/max thermometer. Notified Person in Charge (PIC); PIC acknowledged internal temperatures. Per PIC the unit was working normally and was stocked at 5am. PIC moved all listed tcs foods to main walk in to cool to 41*F. PIC will not use upright refrigerator until maintenance has been conducted. Reviewed and discussed: yearly maintenance on all cold holding refrigerators; integrated pest management control. Recommend: repairing/replacing upright true refrigerator opposite Managers Office; replacing damaged/warped ceiling tiles. Of note: establishment will be undergoing remodel in near future.
