Core-3-304.12 , C: In-Use Utensils, Between-Use Storage ---- Observed several small knives being stored directly in sanitizer at the serving table. PIC removed the knives and moved them to the three compartment sink upon request. Discussed storing knives in a clean, dry location and ensuring they are washed, rinsed and sanitized every 4 hours. Discussed ensuring that no sanitizer is present on the knives and that the knives are always fully dry before use in order to avoid contamination into the food.
