PIC reviewed policies and procedures with employees, and had employees wash their hands. Food employees must wash their hands and before donning gloves to initiate a task that involves working with food and after engaging in other activities that contaminate the hands.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4618/AMC-Toolbox---Reheating.--- At time of inspection, observed meat balls in marinara sauce with an internal temperature range of 120F-125F located in steam table. The meat ball marinara comes in a commercially processed pre-packaged bag to the establishment. The temperature of the water in the steam table was 150F at time. As per PIC and time sticker, the meat balls marinara was re-heated in the microwave less than 2 hour prior to inspection. Had PIC re-heat meat ball marinara in the microwave to 135F. All TCS food directly from commercially pre-packaged containers must be heated to 135F within 2 hours for hot holding.

Proper test kit shall be present to measure chemical sanitizer concentration for re-inspection. A test kit or other device that accurately measures the concentration of sanitizing solutions must be provided prior to re-inspection on 6/6/2022 or in lieu of re-inspection adequate proof of correction may be provided via electronic means.

Emailed owner a link on where to obtain a certified food managers certification. *Repeat violation* *Must install an ASSE 1022 Dual Check Valve on water in-let connection for a non-carbonated system for the tea brewer prior to next routine inspection. No County legal action will result from this inspection. Report emailed at time of inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
