For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ----Observed cut spinach, mayo, sliced turkey, cooked chicken, various cheese, sliced ham, sliced beef, meatballs, and salami in the walk-in cooler holding between 48*F-52*F. Per PIC, all items had been in the walk-in cooler for more than 4 hours. PIC discarded all TCS food in the walk-in cooler upon request. Discussed using only the walk-in freezer, the table top cooler, or the small reach-in cooler until the walk-in cooler is repaired. Please ensure TCS food cold holds at 41*F or below.
