Cooked chicken on the counter measured with an ambient temperature of 85 degrees F. Per PIC, chicken was cooked 10 minutes ago and was not going to be cooled down to 41 degrees F to be cold held. The chicken was going to be reheated as needed. Discussed options of hot holding at 135 degrees F, cooling down to 41 degrees F, or using time as control. Chicken was placed in the walk-in refrigerator to cool down rapidly.

Per PIC, time as control is being used for the pizza by the slice. Per PIC, pizza was prepared at 1pm, but did not have documentation to support this time. Discussed tracking the time and the requirement of having a time as control policy posted. Emailed document to assist with creating time as control policy and log. A re-inspection will be conducted within 10 days to ensure a time as control policy is posted
