Discussed requirement for soda nozzles to be fully washed, rinsed and sanitized every 24 hours. Discussed that manual scrubbing is necessary to remove buildup. The PIC had the soda gun disassembled to be washed, rinsed and sanitized at the time of inspection.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment-----Observed cooler gaskets in disrepair and not smooth or easily cleanable in prep cooler on the line. All equipment must be maintained in good repair. Discussed that new gaskets may improve cooler efficiency and will help to keep out environmental moisture. Must repair/replace prior to next routine inspection.

Core-6-501.12, C: Cleaning, Frequency and Restrictions ------- Observed pooling water in the keg cooler and beneath the keg cooler on the ground. Discussed health concerns of pooling water with PIC. PIC had the area cleaned at the time of inspection. Advised PIC to have the unit serviced to ensure normal operation and to continue mopping up water as necessary. Also observed an accumulation of dust from the vents throughout the kitchen. Clean areas prior to the next routine inspection to reduce risk of physical contamination of food by dust.
