PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Ham and cheese sandwiches, meat/bean/cheese burritos, and string cheese with internal temperatures between 58 degrees F and 60 degrees F cold holding in a glass front reach-in cooler by the walk-in. Ambient temperature of the reach-in cooler was determined to be 58.6 degrees F by using a min/max thermometer. PIC stated that the items had been placed into the reach-in cooler this morning, about 3 hours before inspectors arrival. TCS ingredients in the reach-in cooler were moved to the walk-in to cool to 41 degrees F or below. PIC will call service technician to repair the unit. Ensure all cold holding TCS items are held at 41 degrees F or below.

Ambient temperature of the reach-in cooler was determined to be 58.6 degrees F by using a min/max thermometer. Gasket on the door of the reach-in unit is missing. Establishment has sufficient cooler capacities to operate safely until the unit can be repaired. PIC will call technician to repair reach-in cooler. Ensure all TCS items are not placed into the unit until it is repaired.
