Employee stated that the pizzas had been made about an hour prior and discarded-see embargo form. The FOOD shall be marked or otherwise identified to indicate the time of discard following internal policies not to exceed 4 hours.

Core-2-102.12(A), C: Certified Food Protection Manager----The PIC is not a certified food protection manager. Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one certified Food Protection Manager (CFPM) on staff. The Person in Charge shall be a CFPM and is required to be onsite during the hours of operation. This certificate must be visible or readily accessible and kept at the establishment for all inspections. -Second Consecutive Violation Provided the PIC with CFPM information. *A complaint was addressed during this inspection. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
