Observed various types of sliced deli meat at 47*F and mashed potatoes at 46*F in top right portion of prep table across from stove. Unit observed at 41*F inside and 48*F in top table portion. Employee stated items were stocked no more than an hour prior and moved to walk in to rapid cool. TCS items must be at or below 41*F to prevent growth of bacteria.

Observed right top portion of prep fridge across from stove holding various TCS items to be at 48*F. Inside of unit was observed at 41*F. Manager will call for maintenance and keep TCS items inside fridge or on top portion with lids during busy hours. Cold holding units holding TCS items must be able to keep TCS items at or below 41*F to prevent growth of bacteria.
