Observed hand sink on prep line without hand towels or hand drying equipment. Per manager, employees do not use the hand sink. The next closest hand sink is not visible from the prep line. Discussed with manager the hand sink on the prep line needs to be in use and stocked with hand towels or other hand drying equipment to promote proper hand washing practices. Manager stocked hand sink with paper towels.

Observed can opener located at prep table with food debris on it. Per manager, the can opener had not been used yet that morning. Food contact surfaces and other utensils shall be clean to the sight and touch in order to prevent food contamination. Manager ran can opener attachment through mechanical warewashing machine to wash, rinse, and sanitize.

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed multiple Time and Temperature Control for Safety (TCS) food items located in table-top cold holding units along prep line registering an internal temperature between 47° and 52°F at 10:40am. The cold holding units were observed at a temperature between 40°F and 42°F. Per manager, the food items had been placed into the unit at 9:00am. Food items included various sliced cheeses, various deli meats, cut lettuce, cut tomatoes, and other TCS food items. Raw and ready to eat TCS food items shall be held at a temperature of 41°F or below to prevent the risk of pathogen growth. Manager and staff rapidly cooled food items using covers for the cold holding units as well as ice baths.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
