Time as a public health control: procedures & record
Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. Several pans of prepared pizza in the zone 2 did not have any timer indicating when they were placed under time as a control. The person in charge (PIC) stated the food items were placed there approximately 30 minutes prior. The PIC added the correct times at the time of inspection. Please ensure prepared pizzas have timers and ensure they are not held at room temperature for more than 4 hours.

Toilet facilities: properly constructed, supplied, & cleaned
Core-6-202.14, C: Toilet Rooms, Enclosed...The door of the bathroom located in back of the kitchen was found opened during the establishment. The door was able to be closed at the time of inspection. Informed the PIC that the bathroom needs to closed during food preparation and also needs to have a self-closing mechanism. Please address prior to next routine inspection.

Inspection report was emailed and received by the PIC at the time of inspection. Core-2-102.12(A), C: Certified Food Protection Manage (CFPM): The person in charge (PIC) did not have the CFPM at the time of inspection. Per 2017 Food Code, the PIC shall be a CFPM and is required to be onsite during the hours of operation. Please have a CFPM on-site prior to next routine inspection. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
