PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding......Cut lettuce in pan, under temperature control per manager, in top of cold table at 51*F for unknown time. All other TCS food in the unit was holding properly cold. It could not be determined at time of inspection why the lettuce was above temperature. Embargoed, manager discarded. Discussed verifying proper receiving temperatures with manager.
