Per manager, pizza by the slice uses time as a public health control. A log sheet was prepared for the day and start time was noted on log sheet. Discussed the importance of following time as a public health procedures for pizza by the slice, roller dogs, and warmer by register. (B) If time without temperature control is used as the public health control up to a maximum of 4 hours: (2) The FOOD shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the FOOD is removed from temperature control.

Instructed employee to store all food and food contact surfaces at least 6 inches off of ground to prevent contamination. (A) Except as specified in ¶ (D) of this section, cleaned EQUIPMENT and UTENSILS, laundered LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 cm (6 inches) above the floor.

Discussed with employees: using a handwashing sink, new ice scoop, test strips. Core-2-102.12(A), C: Certified Food Protection Manager .........No certified food protection manager at establishment. Via email, provided information on obtaining food manager certification. Provide and maintain copy of food manager certification at establishment at all times. (A) At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM (4th Consecutive Violation). Person in charge consented to inspection and reviewed inspections rights with person in charge: Kat T. Routine inspection report was emailed to and Inspection Review Notice was handed to person in charge at establishment. Inspection report confirmed received. No County legal action will result from this inspection.
