The section lead indicated it was a "go back" raw chicken and he stored it there to start the go back process. Discussed with section lead that all raw animal proteins must be stored below/away from and ready to eat foods to prevent contamination of the ready to eat foods. The raw chicken was removed from the case.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding.>>>Observed macaroni and cheese (internal temperature 123*F) and mashed potatoes (internal temperature 97*F) in the hot case in the deli. Section lead was unable to answer to what internal temperature they were reheated. Section lead indicated these foods were just placed in the case. Person in charge instructed them to reheat the macaroni and cheese and mashed potatoes to at least 145*F before putting it back in the warmer. These foods were reheated to an observed 150*F for the macaroni and cheese and the mashed potatoes to 122*F. Discussed with section lead and person in charge reheating and maintaining any food that is taken from a commercially processed, hermetically sealed container or intact package to 135*F for hot holding. Person in charge willingly discarded the mashed potatoes and said they would retrain staff concerning hot holding and reheating.

e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
