Large glass door cooler is holding eggs at 70°F. As per person in charge unit went down yesterday and all other time/temperature control foods were moved to other coolers. One of those other coolers is a household refrigerator that was set up outside back door and that unit is holding rice, beans ceviche, cream cheese and sourcream at 55 °F. Instructed person in charge to discard all out of temperature time/temperature control foods. Technician was on site before my arrival. Glass door unit is blowing 41 °F. Reviewed how to check thermometer calibration using ice water at 32 °F. Instructed person in charge to remove outside household refrigerator.
