PIC stated that the items were placed in the reach-in cooler at 10:30 AM. start of inspection was at 1:20PM less than four hours. Instructed PIC to move items to the walk-in cooler for rapid cooling and continue cold holding. Please ensure cold held TCS food items are maintained at 41*F or below.

Core-2-102.12(A), C: Certified Food Protection Manager>>>> PIC was unable to produce documentation showing that there is a certified food manager employed at this establishment. PIC will obtain the certifications for employees so that there is always one person ON DUTY who has a food manager certification. Discussed cold/hot holding temperatures, proper reheating procedures (165*F or above), proper cooking temperatures, and ice machine maintenance with the PIC. Inspection emailed and verified No County legal action will result from this inspection.
