Following foods found in deli display case at internal temperatures of 46*F-48*F: macaroni salad; ancho steak, seafood salad, chicken salad; tuna salad, Greek pasta, potato salad, banana pudding, and lemon capellini. Unit's thermometer displaying 48*F. Cold holding of TCS foods must be at 41*F or below. Per conversation with PIC and food employee, internal food temperatures have been monitored within the last two hours and have been at proper cold holding temperature. Properly cold hold TCS foods at an internal temperature of 41*F or below. --------- Food employee removed out of temperature foods items from unit to quick chill. Do not use unit to house TCS foods for cold holding until unit can foods internally at a temperature of 41*F or below.
