Observed raw beef over raw and cooked fish in sandwich prep cooler across from grill. Raw beef is to be stored beneath raw fish to prevent cross contamination. Beef and fish were switched to prevent any contamination.

Verbally discussed Notice of Inspection Rights with Roxanne S. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Cooling chart information was provided to manager to assist with cooling practices of food items.
