The manager stated the brisket had been cooked and cooled in the freezer two days ago, the broth yesterday morning, and the pork 5 days ago. Please ensure all TCS food items are date marked properly and used or discarded no more than 6 days after their day of preparation for a total of 7 days. Discussed date marking requirements for TCS foods prepared onsite and frozen after preparation. The manager added date marks to all foods at the time of inspection.

Core-4-202.16, C: Nonfood-Contact Surfaces ------ At the wok station, observed areas where the metal has eroded and has been patched with concrete and wire scrub brush. Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. Discussed repairing/replacing the unit as soon as possible to restore a smooth and easily cleanable surface.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability ------ In the kitchen along the back wall and beneath the 3 compartment sink, observed areas of heavy water damage causing warped drywall and creating holes through the wall. Discussed that holes may provide entry or harborage to pests. Repair/replace areas with smooth and easily cleanable surfaces and maintain in good repair.

Core-6-303.11, C: Intensity-Lighting ------ Observed two lighting bays in the back kitchen non-functional at the time of inspection. The manager stated the lights work for a short time before overheating and turning back on after a cool-down period. Also observed a missing light bulb under the hood vent above the broth. Repair/replace lighting to ensure there is at least 540 lux (50 foot candles) at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. The manager stated that the bulbs would be replaced as soon as possible.
