Establishment uses QT-10 at the three compartment sink. Contact time for Quaternary Ammonium solutions must be at least 30 seconds or follow manufacturer recommendations. Employee was instructed to re-sanitize the metal cooking pan at time of violation. Discussed proper contact time with the person in charge (PIC) and recommended re-training for staff on cleaning food contact surfaces. Food contact surfaces of ice machines must be cleaned at a frequency to prevent the accumulation of organic matter/soil/debris. Per PIC, ice machines are cleaned by facilities staff. Instructed PIC to increase the cleaning frequency of ice machines to ensure they are maintained in clean condition.

Core-4-602.13, C: Nonfood Contact Surfaces---Observed green organic matter build up inside the walk-in refrigerator on the multi-tiered rack to the left of the freezer door. Also observed organic matter build-up on the bottom half of the freezer door. Non-food contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Per PIC, establishment will clean non-food contact surfaces of equipment inside the walk-in.
