These items were all stored on a sheet pan on top of the open top inserts. Adjacent to the grill, observed a pan of cooked potatoes/77F being held at room temperature. Maintain cold TCS food at or below 41F. At the prep table, staff was instructed to discontinue placing food TCS foods above the inserts, and the foods were relocated to the refrigerator below. Staff will use time as a control to monitor the cooked potatoes near the grill, and a discard time was labeled on the product at the time. Guidance document provided.
