PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed mozzarella cheese, pizza sauce, sliced deli ham, and precooked pork sausage crumbles with internal temperature ranging from 50-54 degrees Fahrenheit in top compartment of prep-style refrigerator used for pizza. Please ensure time-and-temperature control for safety (TCS) foods are kept cold at 41F or colder. Ambient air temperature of unit was measured at 46F with min-max thermometer. Per manager, pizza toppings were placed in unit less than 2 hours prior to inspection. Pizza toppings and other TCS items in unit were moved to alternative prep-style refrigerator during the inspection to correct. Unit that was not holding cold is not critical piece of refrigeration and establishment has sufficient cold- holding capacity for remaining TCS foods. Unit that is not holding cold shall not be used to store TCS foods until repairs are completed.

Establishment is using 4th-generation F'Real Frozen Dessert machine and not washing, rinsing, and sanitizing food contact surfaces of the equipment every 4 hours; unit self- sanitizes every 24 hours, per person in charge (PIC). If TCS food contact surfaces of equipment will only be sanitized every 24 hours, a variance is required. Please submit a variance application, provide a cleaning policy in writing that meets the existing Code requirements for TCS food contact surfaces, or discontinue usage of the machine by December 12, 2023.
