Received an email from the manager stating that the establishment will wash, rinse, and sanitize the internal food contact surfaces of the f'real machine every 4 hours per the code requirements. The manager also stated that they obtained a log book to record each of the cleanings on a 4 hour interval to ensure that the task is completed properly and per the code requirements. No variance will be required for alternative cleaning schedule of the f'real machine, as long as this cleaning procedure is followed. This advisory will satisfy the re-inspection requirement for the violation documented on the routine inspection from 11/28/23. No County legal action will result from this inspection.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
