Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation.....Portioned salsas in pans of ice at service window at 53*F internally. Manager stated they were under time control, but no discard time was available. Manager determined discard time. Provided 4 hour time as control guidance sheet to manager. Please ensure TCS food is maintained 41*F or below, or under time control with proper documentation and discard. Core-3-305.11, C: Food Storage-Preventing Contamination from the Premises....Bag of carrots stored directly on walk-in floor. Manager moved carrots to proper storage, at least 6" above the floor. Employee washed tomatoes before cutting and put them back into the original cardboard produce box. Had tomatoes re-washed and put into a food safe container.

Core-2-102.12(A), C: Certified Food Protection Manager. Manager stated he has manager certification, but no current certification available at the time of inspection. Please ensure a currently certified food manager is present whenever food is handled. Discussed proper re-heating to 165*F for hot-holding with manager.
