Observed employee food and drinks being stored above salsas in reach-in cooler located at the front of house. Discussed separating the storage of employee food and personal items so there is no risk of contaminating food or food contact surfaces. Repeat violation.

Tomatoes were embargoed at time of inspection. Food items must be safe, unadulterated, and honestly presented.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Observed portioned cooked red and green salsa and portioned cooked carrots & pepper in the reach-in coca-cola display cooler with temperatures between 45 to 50*F. Per PIC, portioned carrots & pepper had been in the reach-in more than 4 hours prior to inspection and were embargoed at time of inspection. Per person in charge (PIC), red and green salsa were placed in the cooler less than 4 hours prior to inspection. PIC moved salsa's into the walk-in to rapid cool at time of inspection. Observed coca-cola display cooler with a label stating, 'this equipment is intended for the storage and display of non-potentially hazardous bottled or canned products only.' Discussed with PIC about discontinuing use of the reach-in for TCS foods. Discussed proper cold holding with the PIC. All TCS foods held cold must be held at 41*F or below at all times.

This establishment received a C Grade and had 2 Priority, 0 Priority Foundation and 3 Core violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. Repeat violation (2nd consecutive). Of Note: - Observed new mop sink installed near the ice machine in the back of house. Per PIC, mop sink was installed a couple of months ago. Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days. - The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
