Per staff, the sausage was within safe cooling time parameters. After instruction, the worker spread the sausage on sheet pans to facilitate cooling of all the sausage.

Maintain food packaging materials elevated at least six inches from the floor on approved shelving.

PRIORITY VIOLATION-5-402.13, P: Conveying Sewage......Observed floor sink below the warewashing sink draining extremely slow. Hand sinks, mop sink, and toilets in the facility were observed in good working order and did not affect this floor sink and drain under the warewashing sink. Repair the drainline as needed. Correct prior to re-inspection. PRIORITY VIOLATION-5-402.11, P: Backflow Prevention.....Drainline below the warewashing sink extended below the flood rim of the floor sink. After instruction, the manager cut the drainline and provided a one inch air gap.
