Portion cups of ranch holding at 65*F in tray on service counter. Per employee ranch has been out of cooler for nearly an hour, portion cups were returned to cooler. Discussed using time as a public health control and alternate temperature control methods for convenient placement of items in future. Dry storage rack has opened containers of mayo 68*F and ranch 71*F. Per employee opened containers have been on rack since yesterday (more than six hours prior). Items were removed to discard, see embargo. All ready to eat time/temperature control for safety foods must be cold held at 41*F or below. This is a consecutive violation. Offered Active Managerial Control class information.
